(and by that I mean ease me into the movie and wow me with it. Don't just tell me a long list to catch up with the canon, I just wanna watch something fun)

I would say you should watch the first one, Godzilla vs Mecha Godzilla or Godzilla vs Destoroyah. And after you´ve gained some knowledge watch Godzilla final wars

Very tough call...

I mean, the original original Japanese movie is a classic, and is the starting point for every era of Godzilla movies. It's the most serious of them all I'd say.  What I can do is give you my favorite from each era, excluding the original Gojira movie..

Showa Era - Godzilla vs. Gigan

Heisei Era - Godzilla vs. King Ghidorah

Millennium Era - Godzilla against Mechagodzilla/Godzilla: Tokyo S.O.S. (I combine the two together for the most part.

The difference between Eras is more that in the Showa Era, Godzilla is more of a heroic figure. The two series after is when he's depicted more like he was intended, as a force of nature.  These three movies also have fantastic soundtracks as well.

Mecha Godzilla. No contest.

The first one does have the King Caesar song, as well as some pretty good fight scenes.

Terror of Mechagodzilla was awesome too, and had a fantastic soundtrack.
