Alright, I'll try to narrow it down. Umm... Ganon's Tower, I guess.

Intro Stage to MMX, of course. Sigma Stage 1 as well, and Storm Eagle.
X2's Intro Stage too, actually. Counter Hunter Stage 1 too, if only for the [tornado fang]ing kickass music.
Elysium in Legends 2.

Venom Base (all of them) from Star Fox.
Hell, why not... the hard route Venom from Star Fox 64 too.

Magus' Castle from Chrono Trigger.

Norfair in Super Metroid. The lower part where you fight Ridley, if I have to specify.

Cannon's Core 3 in Sonic Adventure 2 (again, music plays a big part here).
Doomsday from S&K3 was always one of my favourite Sonic game moments ever.

There's lots lots more, but that would defeat the whole purpose of this thread... hell, I've probably gone too far as it is.

First things that came to my mind:

SMB: 6-3 (that weird black and white stage), 4-3 (mushrooms!) is fun too.
SMB3: whatever the name is (world 2 or 3), I like that stage in which everything is few times bigger.

from the 3D Sonics, i guess my favorite there would be Green Forest. though Cosmic Wall is an absolute blast too.

Metroid's a tough one. for now, i'll give it to Green Brinstar in Super.

for the Mario platforms, gotta go with Hell Prominence cause that's an awesome [tornado fang]ing name. for the Mario spinoffs, i was always a big fan of Koopa Troopa Beach in Mario Kart 64.

and i'll name my favorite stage in Rosenkreuzstilette as well: Iris Stage 2.

-Stardust Speedway from Sonic CD
-Lava Reef Zone from Sonic 3 & Knuckles
-Every level in SMB3
-Every level in SMW
-Every level in ZOE2
-Banshee Boardwalk in MK64 (cause I never lose on it)
-Block Fort in MK64 Battle Mode
-Every other level in MK64
-Foundation in Halo 3 (One of the best JEEP ACTION levels)
-Airships in Power Stone 2. (Hey now, watch your step. Don't fall off, cause it's a LONG way down from here.)
-Every other level EXCEPT THE SAMURAI level in Power Stone 2
-All of Manhattan in Spider-Man 2: The Movie Game

Well, I'm sure I could come up with a meaty list of strong entries.  But for the one most awesomest stage ever, there is only one entry for me:

Sonic Adventure 2 - Final Rush

This stage just rocks on so many levels.  Tons of stunts and shortcuts to test your mad skillz, and in doing so you get to spite all the "professional" jackasses who claim that Sonic was never properly done in 3D.  Nuts to them, I say, because this is the best 3D action stage of ANY game, ever.
