I feel like bucking the popular vote.  Wolfang for me.  He's an easy boss, but I like his design and his back story.  Its not every lead investigator that can fight off a mob of mavericks.

Explains how easy for her to fight in X8. Plus I've always wondered how she got the battle body in the first place. Alia: A wolf's true weakness. Pit her against Jacob and the latter will be finished quicker than a Prinny.

BAMBOO PANDAMONIUM! Awesome name, and Flame Hyenard's battle is just a pain in the ass. Unless you get on top of the giant machine, on the neck below the ledge, and play as Zero. Then you can keep hurting him, and he'll die long before you do.

Regardless of that, the panda gets my vote.
