So I got a cookie recipe magazine at Lowes and I might make some Chocolate Gingerbread cookies, but I do have to wonder what exactly Anise is.

Star anise has a warm spicy smell, if I recall.  It reminds me of both nutmeg and cinnamon and I tend to lump it in with those spices.  It's that type of exotic spice smell, and star anise flowers look neat.

Beware... Star anise can be overpowering if it's your first time tasting it. Since you have a recipe, follow strictly.

It's very common here to make sauces and braised stuff.

I've only ever seen the dried spice, too.  Mainly the star anise.
