I have a thousand of these lying around somewhere, but I'll spare you the long list and choose one randomly on a whim (of the ones that I can find, anyways)

Arctic Vulpes (Arctic Fox) - Hides in the snowy background, and pounces out at it's prey. Very quick and hard to hit, would only be truly vulnerable right after a missed pounce. Can freeze enemies in place with ice claws. Battle area would fit best as a terrain similar to Overdrive Ostrich's.
